CAKE DECORATING I     12 hours -   4    three-hour sessions

Designed for the beginner

* emphasis on fundamental skills
* learn borders,garlands, flowers, basketweave, writing and more.
* in the final session assemble and fill a real cake with the techniques learned

PREREQUISITE: None
PLEASE BRING: pencil, apron, scissors, off-set palette knife, 3 plastic containers with lids

CAKE DECORATING II

DATES:   February 7 - 28     12 hours -   4    three-hour sessions

* new piping skills including novelty pressure piping
* run-outs

* an introduction to rolled fondant

CAKE DECORATING  Ill

DATE:  March 8 - 29     12 hours -   4    three-hour sessions

* This class will feature rolled fondant covered cake decorating with classic techniques including stringwork, cornelli lace, embroidery, broderie anglaise, and moulded fondant roses.

PREREQUISITE: Cake Decorating I & ll
PLEASE BRING: Supplies from Cake l and ll, non stick board and rolling pin, FMM rose petal cutter set, small paint brush , scissors, pencil and paper

ROLLED FONDANT   

DATE:  February  2 - 9     6 hours -  2  three-hour sessions

LAMBETH METHOD - advanced

DATE:  January 28     6 hours 

TIME:  9:30 am  -  3:30 pm  

FEE:  $125.00 + HST



This class is for those who have confidence in piping

Joseph Lambeth created amazing cakes and his piping skills won himself many gold medals. His book Lambeth Method of Cake Decorating and Practical Pastries, was first printed in 1934 and is sought after even today. We are fortunate to have a copy of the 5th printing, 1964.

Skills in this class will consist if scroll work, over piping, and cushion work. Students will work on a flat surface initially and then proceed to a round styrofoam cake.

PREREQUISITE: Cake Decorating lll and Piping skills
PLEASE BRING: 10" piping bag and coupler, PME tips 2.5, 3.5, 4, 7 star, small palette knife, pencil, apron and scissors
